Quinoa cakes with salmon and tahini yogurt

Ingredients for 4 people:

  • 55 g rinsed quinoa
  • 2* 180 g salmon fillet, roughly chopped
  • 35 g almond flour
  • 2 thinly sliced onions
  • 1 lightly beaten egg yolk
  • 1 teaspoon lightly crushed fennel seeds
  • 1 clove of chopped garlic
  • 1/2 tablespoon finely chopped dill
  • 1/2 teaspoon red pepper flakes (optional)
  • sea salt and pepper
  • 1 tablespoon of organic coconut oil
  • Sliced fennel, sliced radish or arugula for serving

Lemon and Tahini Yoghurt

  • Finely grated rind and juice of 1/2 lemon
  • 75 ml yogurt
  • 1 clove of crushed garlic
  • 1 tablespoon of tahini
  • 1 tablespoon finely chopped dill
  • sea salt and black pepper

its preparation:

  1. Cook the quinoa just until soft. Strain and set aside to cool.
  2. Place salmon, almond meal, onion, egg, fennel seeds, garlic, dill and paprika (if using) in food processor. Then mix it.
  3. Transfer to a large bowl and stir in the quinoa. Season with salt and pepper.
  4. Melt the coconut oil in a large nonstick frying pan over medium heat. Remove 12 meatballs from the mixture with damp hands. Add to the pan (batch if necessary) and cook on each side for 3-4 minutes, until golden brown. Transfer to a paper towel lined tray.
  5. Meanwhile, combine all the ingredients on a small piece of paper to make the yogurt.
  6. Serve three fish cakes per person (or all three) with lemon tahini yogurt, lemon wedges and your choice of fennel, radish or arugula.
